Welcome to the channel, introduce the dish as kanki, a Guyanese sweet treat made from pumpkin and cornmeal.

Grate the pumpkin, ensuring there is no excess water; if there is, strain it to keep the pumpkin flavor.
Add the grated pumpkin to a mixing bowl.
Add cornmeal to the bowl with the pumpkin.
Add finely grated coconut to the mixture and mix well.
Add ginger essence and room temperature butter to the mixture, ensuring the butter is evenly distributed.
Add nutmeg, black pepper (optional), and salt to the mixture.
Add baking powder to the mixture and mix well.
Add evaporated milk and condensed milk to the mixture, adjusting the sweetness with sugar (starting with half a cup).
Mix until well combined and taste to adjust sweetness if necessary.
Prepare banana leaves by washing them in hot water to make them flexible.
Cut the stiff ends off the banana leaves for easier wrapping.
Give the mixture another good mix before wrapping.
Measure out the mixture into the banana leaves, ensuring even portions.
Fold the banana leaves over the mixture to create a neat wrap.
Secure the wrap with butcher twine, leaving space for expansion during boiling.
Repeat the wrapping process for all portions of the mixture.
Boil water in a pot until it reaches a rolling boil.
Place the wrapped kanki into the boiling water, covering the pot.
Set a timer for 25 to 30 minutes and check on the kanki after that time.
After 30 minutes, remove the kanki from the water and allow them to cool before opening to prevent them from falling apart.
Cut into one of the kanki to show the inside.
