Peel the potatoes.

Grate the potatoes using a grater.

Rinse the grated potatoes in cold water to remove excess starch.

Squeeze out the excess moisture using a clean kitchen towel.

Heat oil in a skillet over medium heat.

Add the grated potatoes and onion to the skillet, spreading them evenly.

Season with salt and pepper to taste.

Cook until the bottom is golden brown, about 5 minutes.

Flip the hash browns and cook the other side until golden brown, about 5 minutes more.

Remove from the skillet and drain on paper towels.

Serve hot.
