Start by taking 300 grams of fresh red chili and 150 grams of peeled garlic.
Chop the red chili into rough pieces on a chopping board.
Place the chopped chili and garlic into a chopper.
Add 1 tablespoon of salt and 3 cups of vegetable oil to the chopper.
Chop everything together until finely minced.
In a separate pan, heat the oil on a slow to medium flame.
Add the chopped chili and garlic mixture to the heated oil.
Continue cooking on slow to medium flame while stirring continuously.
Add 2 tablespoons of brown sugar to the mixture.
Pour in 2 tablespoons of white vinegar and mix well.
Add 1 teaspoon of freshly ground black pepper and 1 tablespoon of oyster sauce, mixing everything thoroughly.
Once cooked, turn off the flame and let it cool slightly before transferring to a container.
Store in an air-tight container for up to 2-3 months.
