Mix 2 tablespoons of potato starch with cold water to create a slurry.
Drizzle the potato starch slurry into the rhubarb mixture until the desired consistency is reached.
Taste the sauce for sweetness; adjust if necessary.
Let the rhubarb sauce cool down before serving.
Serve the rhubarb sauce with a scoop of vanilla ice cream, garnished with raspberries and a mint leaf.
