Warm the milk in the microwave, being careful not to boil it.
Add 1 tablespoon of sugar to the warm milk.
Mix in the instant dry yeast to the milk and sugar mixture, forming a paste.
Melt butter in the microwave and add it to the milk mixture.
Add more sugar to the milk mixture and stir to dissolve.
Add 2 egg yolks and lemon zest to the mixture, mixing until combined.
Wrap the bowl with a kitchen towel and let the dough rise for about 1 hour until doubled in size.
Blend cottage cheese with an electric whisk to break down lumps.
Add sugar to the blended cottage cheese mixture.
Incorporate 2 whole eggs into the cottage cheese mixture.
Add raisins to the mixture (optional).
Mix in more lemon zest to the cottage cheese mixture.
Add semolino to the mixture to help bind it together.
Finally, add vanilla extract to the mixture.
