Soak red kidney beans in water overnight to soften.
Drain and rinse soaked beans.
Boil beans in fresh water until tender, about 1-1.5 hours.
Peel and slice plantains diagonally into thick pieces.
Heat palm oil in a cast iron skillet over medium heat until shimmering.
Fry plantain slices until golden brown, about 3-4 minutes per side.
Remove fried plantains and drain on paper towels.
In the same skillet, sauté chopped yellow onions until fragrant, about 2-3 minutes.
Add cooked beans to the skillet and season with salt and dried red hot chili peppers.
Stir to combine and heat through for 5 minutes.
