Soak bulgur wheat in warm water for 30 minutes until softened.
Mix ground beef, soaked bulgur, chopped onion, minced garlic, parsley, coriander, cumin, black pepper, and salt in a bowl.
Form the mixture into small meatballs.
Heat olive oil in a large pot over medium heat until shimmering.
Add the meatballs and brown on all sides for about 5 minutes.
Remove the meatballs and set aside.
In the same pot, add chopped carrots, potatoes, and green beans; sauté for 5 minutes.
Stir in tomato paste and cook for 2 minutes until fragrant.
Pour in vegetable broth and bring to a boil.
Return the meatballs to the pot and simmer for 20-25 minutes until cooked through.
Add lemon juice before serving.
Adjust seasoning to taste.
