Add 250 g of semolina flour to the pasta machine.

Add 250 g of soft white wheat to the pasta machine.

In a separate bowl, whisk together 1 egg and approximately 180 ml of water.

Power on the pasta maker and select the 600 g batch setting.

Place the lid on the pasta maker and press start.

As the flour is mixed, gradually add the egg and water mixture.

Once the dough is mixed, it will change direction and start extruding pasta through the rigatoni attachment.

Cut the rigatoni to a length of 1 to 1.5 inches as it is extruded.

You can either cook the pasta immediately or let it dry for about 24 hours before storing in an airtight container.
