1

Add the dough hook to the KitchenAid stand mixer.

2

Add 1 cup of extra fine double zero flour to the mixer, making a well in the center.

3

Add 2 whole large eggs into the well of the flour.

4

Add 0.5 teaspoon of fine sea salt to the eggs.

5

Lock the KitchenAid mixer in place.

6

Start the mixer on level one speed to mix the eggs and salt.

7

Help the flour from the sides of the bowl into the center while the mixer is running.

8

Once the egg mixture is thick, continue to help the flour combine into the mixture.

9

If the dough is sticky, add more flour a tablespoon at a time until it reaches the desired consistency.

10

If too dry, add a little water or olive oil, a little at a time.

11

Knead the dough in the mixer until it is smooth and bouncy, about one minute more.

12

Remove the dough from the mixer and shape it into a dough ball using the kneading method: push the dough through with the heel of your palm and rotate it 90° each time.

13

Cover the dough and let it rest at room temperature for at least 30 minutes.
