Piri Piri Sauce

Cultural Context

Piri Piri sauce, originating from Portuguese cuisine, is a spicy condiment made from chili peppers and is often used as a marinade for grilled meats, particularly chicken. Its roots can be traced back to the African influence on Portuguese cooking, especially from the regions where the African bird's eye chili is cultivated. The sauce has gained international popularity, especially in the UK and South Africa, where it is commonly used in various dishes.

1

Deseed the red peppers by cutting in half and removing the seeds.

2

Wash and dice the red peppers into cubes.

3

Heat a griddle pan on medium for about 5 minutes.

4

Add the diced red peppers, onions, and garlic to the griddle pan.

5

Grill for about 5 minutes on each side.

6

After grilling, cover with foil to trap in the smoke for about 10 minutes.

7

In a blender, combine the grilled red peppers, garlic, onions, Thai red chilies, chopped fresh thyme, vinegar, salt, and olive oil.

8

Blend into a textured paste.

9

Divide the mixture in two; reserve half for marinade and blend the other half further for a smoother paste.

10

In a saucepan on medium heat, add olive oil and the blended smooth paste.

11

Fry gently for about 3 to 4 minutes.

12

Squeeze in the juice of half a lime or lemon and add zest.

13

Add one teaspoon of smoked paprika and cook gently for about a minute.

14

Add 15 ml of water to rinse the blender and lighten the sauce.

15

Cook gently for another 3 to 4 minutes.

16

Add thinly sliced fresh oregano and turn off the heat, using residual heat to cook through.

17

Finish with the remaining half of lime juice and optional fresh thyme.

18

Sprinkle with Greek basil before serving.
