3 bird's eye chilies
1 fresh tomato
half a bunch of coriander (stalks)
1 tablespoon paprika
15g brown sugar
30ml white wine vinegar
zest and juice of 1 lemon
100ml cold water
50ml light olive oil

Chop 1 medium red onion and 1 red pepper into small pieces.

Chop 3 cloves of garlic and 3 bird's eye chilies.

Add the chopped onions, red pepper, chilies, and garlic to a pan with light olive oil.

Add half a bunch of coriander stalks and let the vegetables sweat for a couple of minutes until slightly softened.

Stir in 1 tablespoon of paprika and the chopped fresh tomato.

Season the mixture heavily as the vegetables start breaking down.

Add 15g of brown sugar and 30ml of white wine vinegar, cooking for no more than 30 seconds.

Switch off the heat and add the zest and juice of 1 lemon to the pan.

Transfer the mixture to a blender and add 100ml of cold water.

Blend while emulsifying 50ml of light olive oil into the mixture.

Taste the sauce and adjust if necessary.

Transfer the sauce to a jar or bottle for storage.
