Preheat the pan and add 1.5 tablespoons of grape seed oil.
Add sliced onions and diced garlic; cook for about 2.5 minutes on medium-low heat.
Add diced mushrooms and cook for about 3-4 minutes.
Add diced bell peppers and stir; cook for an additional minute.
Add 1 pack of baby spinach and cook until slightly wilted; remove and set aside.
Season the salmon lightly; mix cream cheese and grated Parmesan until well combined and set aside.
Roll out the pastry crust and place the salmon in the center.
Add the spinach mixture on top of the salmon; sprinkle with more Parmesan.
Fold the pastry over the salmon, trim the edges with a pizza cutter, and seal the ends with a fork.
Use a knife to create designs on the pastry without cutting all the way through.
Brush the pastry with egg wash and sprinkle with black pepper (optional).
Bake for about 20 minutes until golden brown.
