Preheat the pan on medium-high heat and add 2 tablespoons of olive oil.
Swirl the pan to spread the oil and add freshly chopped garlic; toss for 30 seconds.
Add spinach and cook until wilted, then immediately add cream cheese and stir until melted and combined.
Remove from stove and let cool for a minute.
Dust a sheet of puff pastry with flour and roll it out slightly.
Place the cheesy spinach mixture in the center of the pastry, then lay the salmon on top.
Season the salmon with sea salt and freshly ground pepper.
Cut one-inch sections from the sides of the pastry to the center and braid the pastry over the salmon.
Place the salmon wellington on a baking tray and brush an egg wash over the top.
Bake in a preheated oven at 350°F for 40-45 minutes.
Let the salmon wellington cool for 20-25 minutes before slicing and serving with lemon juice.
