Blend black pepper corns, ginger, turmeric, scotch bonnet peppers, fresh garlic, and onions until smooth.
Dice beef liver into large chunks and wash all ingredients before use.
Combine beef liver and chicken in a pot, season with salt, seasoning cubes, and spices, and cook for 5-10 minutes without water.
Add more water and cook for 20 minutes until the chicken is tender.
Remove the chicken and place it in the oven to bake.
Dice the cooked liver into smaller chunks and set aside.
In the same pot, add more water and curry powder, bring to a boil.
Rinse 8 cups of rice and add it to the pot with salt and seasoning cubes, cover, and cook on low heat for 35-40 minutes.
Prepare vegetables by dicing a large red onion and frying it in 4 tablespoons of coconut oil along with the liver for 3-4 minutes.
Add the blended mixture and fry for 5 minutes, then add frozen vegetables and season with salt and seasoning cubes, frying for an additional 3 minutes.
Gradually add the cooked rice to the vegetable mixture, frying in portions for 3-4 minutes each time until all rice is incorporated.
Add 1-2 tablespoons of butter and cover the pot to allow the rice to get a smoky flavor for a few minutes.
