Prepare pakora by mixing gram flour, turmeric, and salt; form into fritters and fry until golden brown.
Chop green chilies and add them to the pakora batter for extra flavor.
In a pot, heat oil and add fenugreek seeds, cumin seeds, mustard seeds, and asafoetida; sauté until fragrant.
Add ginger-garlic paste and whole red chilies; cook until the paste is slightly browned.
Add chopped onion and sauté until it turns pinkish.
Mix in turmeric and the yogurt mixture; stir well and cook until combined.
Prepare rice by soaking it in water; heat butter in a separate pot, add fennel seeds and cumin seeds, and sauté until fragrant.
Add water according to the quantity of rice, then add salt and soaked rice; cover and cook until done.
Add pakoras to the karhi once it has thickened; mix well.
Prepare mixed vegetables by sautéing them with oil, cumin seeds, mustard seeds, and ginger-garlic paste; add chopped green chilies and turmeric.
Finish the mixed vegetables with salt and garam masala; cook until tender.
Serve the karhi with rice and mixed vegetables, garnished with fresh coriander.
