1

Clean the whole fish and rinse with lime, vinegar, and cold water.

2

Season the fish with Maggi all-purpose seasoning, black pepper, and green seasoning, making sure to massage it into the fish.

3

Wrap the seasoned fish and refrigerate overnight for better flavor.

4

Prepare the vegetables: cut carrots into strips, and chop onion, scallion, and tomato.

5

In a deep pot, melt butter over medium heat and add onions and scallions, cooking for 2-3 minutes.

6

Add the carrot strips and tomato, cooking for another minute.

7

Add garlic and allspice berries, followed by fresh thyme.

8

Pour in water and coconut milk, and add fish tea seasoning and black pepper to taste.

9

Simmer the liquid for about a minute to allow flavors to meld.

10

Lay the seasoned fish in the pot and add okra.

11

Spoon the liquid over the fish and cover the pot, simmering for 10-15 minutes until cooked through.

12

Check the fish occasionally to ensure it doesn't stick to the pot, adding more liquid if necessary.

13

Serve with water crackers soaked in the flavorful liquid.
