Prepare the tagliatelle dough by mixing 200g of whole eggs, 50g of egg yolks, 150g of semolina, and 350g of "00" flour.
Roll out the dough and cut it into tagliatelle shapes.
For the strozzapreti, mix 400g of "00" flour with 200g of water and 15g of salt to form a dough.
Shape the dough into strozzapreti.
For the maccheroni, combine 300g of "00" flour with 100g of semolina and 4 egg yolks, adding water as needed to form a dough.
Extrude the dough into maccheroni shapes.
