In a mixing bowl, combine granulated sugar and eggs, and beat until well mixed.
Melt the bittersweet chocolate and let it cool slightly before adding it to the sugar and egg mixture.
Add vanilla extract and room temperature unsalted butter to the mixture and beat until creamy and smooth.
In a separate bowl, whip the heavy cream until soft peaks form, then gradually add powdered sugar and continue whipping until stiff peaks form.
Fold the whipped cream into the chocolate filling until fully combined.
Pour the filling into the prepared pie crust and smooth the top.
Refrigerate the pie for several hours until set.
For the topping, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form, then spread it over the chilled pie.
Garnish with chocolate shavings if desired.
