Preheat the oven to 350°F.
In a bowl, combine 2 tbsp melted butter, 2/3 cup graham cracker crumbs, and 2 tsp sugar until it forms a sand-like consistency.
Divide the graham cracker mixture between two 5-inch pie tins and press it down evenly into the bottom and up the sides.
Place the pie tins on a cookie sheet and bake in the oven for about 7 to 8 minutes, until the edges start to turn golden brown.
In a bowl, combine 1/4 cup softened butter and 1/4 cup plus 2 tbsp granulated sugar and beat until fluffy.
Add 1 oz of melted unsweetened chocolate (cooled to room temperature) and 1/2 tsp vanilla extract to the butter and sugar mixture and mix well.
Add 1 egg to the mixture and beat for 5 minutes to achieve a silky texture.
Once the filling is ready, ensure the graham cracker crust is cooled, then divide the filling between the two pie tins.
In a separate bowl, whip 1/2 cup heavy whipping cream with 2 tsp sugar and 1/2 tsp vanilla until stiff peaks form.
Spread the whipped cream on top of each pie using an offset spatula.
For garnish, use a potato peeler to shave some unsweetened chocolate into curls and place them on top of the whipped cream.
Refrigerate the pies for a few hours to set before serving.
