Greek yogurt reduces calories while maintaining creaminess
Start by cutting up baker's chocolate into small pieces.
Melt the chocolate in a double boiler with about 2 inches of water simmering underneath.
Once melted, add a good amount of butter to the chocolate and stir until combined.
Add instant coffee to the melted chocolate and butter mixture, stirring to combine.
Whip 3/4 cup of heavy cream in a mixing bowl until light peaks form.
Add icing sugar to the whipped cream and continue whipping until stiff peaks form.
In a separate bowl, crack 3 eggs and whisk them until well combined.
Once the chocolate mixture has cooled for about 5-10 minutes, combine it with the whipped cream and the eggs, mixing until smooth and fluffy.
If desired, pour the chocolate mixture into a pie crust or serve in cups as chocolate mousse.
Chill the pie in the refrigerator until set, or serve immediately if using cups.
