Greek yogurt reduces calories while maintaining creaminess

1

In a medium-sized saucepan, add 1 and 1/3 cups of sugar and 4 eggs.

2

Cook on medium-low heat while whisking constantly until the mixture reaches 160 degrees.

3

The mixture is ready when it coats the back of a metal spoon.

4

Chop 8 ounces of semi-sweet chocolate and add it to the mixture along with 2 teaspoons of vanilla extract.

5

Remove from heat and let it completely cool for about 30 to 45 minutes.

6

In a stand mixer, add 1 cup of room temperature butter and mix until light and fluffy.

7

Once the chocolate mixture is completely cool, add it to the butter and mix until well combined, scraping down the bottom of the bowl as needed.

8

Instead of whipping 8 ounces of heavy whipping cream with 2 tablespoons of powdered sugar, add an 8-ounce container of Cool Whip to the chocolate mixture and gently fold it in until no streaks remain.

9

Press the chocolate mixture into a pre-baked refrigerated pie crust in a deep dish pie plate.

10

Refrigerate the pie for 4 hours before serving.
