Add chopped green chili, carrots, and peas to the onion mixture, cooking until tender.
Stir in cooked, mashed potatoes, coriander, cumin, and black pepper; mix well and set aside to cool.
Once the dough has risen, punch it down and divide it into small balls.
Flatten each ball into a disc and place a spoonful of filling in the center.
Fold the dough over the filling to create a half-moon shape, sealing the edges tightly.
Heat oil in a deep skillet until shimmering.
Fry the pastries in batches until golden brown.
