bell pepper – 12 oz /340 g
tomatoes – 14 oz /400 g
bulb onion – 6 oz /175 g
brynza cheese – 7 oz /200 g
6 eggs
dried thyme – 1 tsp
fresh basil – 1 tsp
fresh parsley leaves – 2 tbsp /10 g
ground red pepper – ½ tsp
vegetable oil – 2 tbsp
olive oil – 1 tbsp
salt - to taste

Dice the bulb onion, cut the bell pepper into small wedges, place the tomatoes into boiling water for 30 seconds, then peel and chop.

Heat a pan, add 2 tbsp of vegetable oil and fry the bulb onion for 3 minutes over medium heat.

Add the bell pepper, 1 tbsp of olive oil into the pan and stirring fry for 5 minutes over medium heat.

Add the tomatoes, dried thyme, chopped fresh basil, ground red pepper and salt to taste, stir and simmer for 8-10 minutes over low heat.

Add the chopped brynza cheese and stir.

Add the eggs and fry stirring constantly over medium heat for 2-3 minutes.

When serving sprinkle your mish-mash with the chopped up fresh parsley.
