50 ml oil
7–8 roasted red peppers
2–3 diced tomatoes

5 eggs
200 g crumbled feta cheese

Chop one onion finely.

Heat 50 ml of oil in a pan.

Sauté the onion until it turns golden and fragrant.

Chop 7–8 roasted red peppers and add them to the pan, stirring together.

Add 2–3 diced tomatoes and let everything simmer.

Add salt to taste.

Add 5 eggs and 200 g of crumbled feta cheese to the mixture.

Mix slowly, only a few times.

Cook until the eggs are just set.

Add parsley and basil or just basil if preferred.
