Prepare the topping by melting 50 grams of salted butter in a pan, then add 80 grams of soft brown sugar and 1/4 teaspoon of vanilla extract, stirring until combined.
Arrange the sliced apples in the bottom of the cake pan over the caramel mixture.
For the cake batter, cream together 100 grams of softened salted butter, 50 grams of caster sugar, and 50 grams of soft brown sugar until light and fluffy.
Add in 2 medium eggs one at a time, mixing well after each addition.
Stir in 1/2 teaspoon of vanilla extract and 1 tablespoon of milk.
In a separate bowl, combine 100 grams minus 2 tablespoons of sifted flour, 2 tablespoons of cornflour, 1 teaspoon of baking powder, 1 teaspoon of autumn spice mix, and a good pinch of salt.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Pour the batter over the apples in the pan and smooth the top.
Bake in a preheated oven until golden brown and a skewer inserted comes out clean.
