Maple Syrup Candy

Cultural Context

Maple syrup candy, or Tire d'érable, is a cherished Canadian tradition, particularly during the sugaring-off season in late winter and early spring. This delightful treat is made by pouring hot maple syrup over snow, creating a chewy, sweet candy that evokes nostalgia for many Canadians. It symbolizes the connection to nature and the maple tree, which is integral to Canadian culture. Today, it is enjoyed not only in Canada but has also found fans around the world, especially among those who appreciate the unique flavor of maple syrup.

💰Cheaper: corn syrup

Corn syrup is less expensive but lacks the distinct maple flavor.

1

Combine 1/2 cup 35% cream, 1/2 cup butter, 1/2 cup maple syrup, and 1 cup sugar in a pot on medium heat.

2

Stir the mixture constantly to prevent burning.

3

Use a candy thermometer to monitor the temperature.

4

When the mixture reaches 240° F (116° C), it is ready to pour.

5

Note that the temperature may hover around 220° F for a few minutes before rising to 240° F, so keep a close eye on it.

6

Wear oven mitts and consider wearing long sleeves while handling the hot mixture.

7

Once the thermometer reads 240° F, remove the pot from the stove and pour the filling into prepared cones quickly.

8

Each batch makes just over a dozen cones.

9

Place in the fridge to cool before enjoying.
