Prepare the ingredients for two portions: 1 kg of flour and 0.5 L of water, along with some salt and 1 egg.
Dust the work surface with flour, using a mix of universal and bread flour.
For the filling, prepare a mixture using parsley, brown mint, quark, bread crumbs, salt, and pepper.
For the meat filling, brown minced meat in a pan, breaking it into small pieces.
Add finely chopped garlic and mushrooms to the browned meat and cook until combined.
Chop up some leek and herbs, then add them to the meat mixture along with salt and pepper; cook until well combined.
Set the meat mixture aside to cool.
Melt butter in a pot and mix it with bread crumbs, then add 100 mL of milk and let it soak for 5-10 minutes.
In a bowl, combine half of a 250 g packet of quark with the cooled meat mixture, mix well, and taste for seasoning.
For the second filling, mix 300 g of toasted bread crumbs with 100 mL of milk and quark, adding chopped leek and herbs to taste.
Prepare the dough by placing flour on the work surface and making a well in the center.
Crack the egg into the well and mix with a fork, gradually incorporating the flour.
Add warm water little by little while mixing until a shaggy dough forms.
Knead the dough for 10-15 minutes until smooth and soft; use a KitchenAid or food processor if available.
Once kneaded, lightly oil a bowl and the dough, cover with plastic wrap, and refrigerate for at least 30 minutes.
After resting, roll the filling into balls of uniform size and set aside.
Roll out the dough on a floured surface, cutting it into circles.
Bring a pot of salted water to a light simmer, not boiling.
Place the dumplings into the simmering water and cook for about 4-5 minutes until they float to the surface.
Remove the dumplings from the water and serve.
