Smoked Kärntner Kasnudeln

Boil potatoes until tender, about 20 minutes.
Peel and mash the potatoes in a bowl.
Mix flour and salt in a separate bowl.
Add eggs to the flour mixture and knead until smooth.
Incorporate the mashed potatoes into the dough until well combined.
Roll out the dough on a floured surface to about 1/8 inch thickness.
Cut the dough into circles using a glass or cutter.
In a skillet, sauté onions in butter until golden, about 5-7 minutes.
Combine sautéed onions with cottage cheese, smoked cheese, salt, pepper, and nutmeg.
Place a spoonful of the filling on each dough circle.
Fold the dough over to form a half-moon shape and seal the edges tightly.
Bring a large pot of salted water to a boil.
Cook the filled dumplings in boiling water for 5-7 minutes until they float.
Remove the dumplings and let them drain.
In a separate pan, melt butter and add bread crumbs, cooking until golden.
Serve the dumplings topped with the toasted bread crumbs and parsley.
