In a big bowl, combine 2 cups of lukewarm water, 2 teaspoons of sugar, and 1 teaspoon of active dry yeast.
Add 2 cups of all-purpose flour, 1/4 teaspoon of salt, and 1 teaspoon of pure vanilla extract to the yeast mixture.
Whisk the mixture together until smooth, ensuring it has a thin batter consistency.
Set the batter aside for 20-30 minutes to rise slightly.
For the topping, mix 1 cup of chopped walnuts with 1 teaspoon of ground cinnamon and 1/4 teaspoon of ground cloves.
Heat a frying pan over medium-high heat and coat the bottom with light olive oil.
Test the oil temperature with a small amount of batter; it should bubble up when ready.
Using a small ice cream scoop, drop scoops of batter into the hot oil, frying for a few minutes on each side until golden brown.
Remove the tiganitas from the oil and drain on paper towels.
Serve warm with honey or maple syrup and the walnut mixture.
