Deep fry the pomfrets until golden brown and cooked through.
In a large skillet, heat extra virgin coconut oil and olive oil over medium heat.
Add finely-chopped garlic, red onion, and julienned ginger; sauté until fragrant.
Add chopped green bell pepper and big tomato; cook until softened.
Mix spice coconut vinegar, stevia sweetener, and water in a bowl; pour into the skillet.
Simmer for a few minutes to combine flavors.
Add the fried pomfrets to the skillet, spooning sauce over them; cook for a few more minutes.
Thicken the sauce with flour mixed with a little water if needed; season with salt, pepper, Mrs Dash Rub, garlic powder, and sesame oil.
Garnish with chopped green onion and serve hot.
