Stir in diced chicken and cook until no longer pink, about 5-7 minutes.
Pour in Riesling wine and simmer until reduced by half, about 5 minutes.
Stir in cream and season with salt and pepper to taste.
Remove from heat and mix in chopped parsley.
Pour the filling into the pastry-lined dish.
Cover with another layer of pastry and seal the edges.
Make a few slits in the top to allow steam to escape.
Brush the top with beaten egg for a golden finish.
Bake for 25-30 minutes or until golden brown.
Let cool slightly before serving.
