Prepare the filling by chopping haggis and vegetables (cabbage, carrot, celery, onion, daikon) into small pieces.
In a preheated wok, add 2-3 tablespoons of peanut oil, then add 1 tablespoon of chopped ginger and 1 tablespoon of chopped garlic, stir-frying for about 15 seconds.
Add all the chopped vegetables to the wok and stir-fry until slightly softened.
Add 2 tablespoons of light soy sauce and mix well with the filling.
Add haggis to the mixture and stir, then add half a cup of boiling water with chicken soup base or chicken stock, mixing until combined.
Scoop the filling into a bowl and let it cool.
Take a 12-inch spring roll wrapper and place about 2 tablespoons of filling in the center.
Use egg wash around the edges of the wrapper to seal.
Fold the wrapper in half to create a half-moon shape, ensuring it is sealed well.
Preheat oil in a deep fryer to 350°F and carefully add the dumplings one at a time.
Deep fry the dumplings for about 3-4 minutes until golden brown and crispy.
