3 tablespoons olive oil
1 large onion, chopped
1 lb lamb chunks
1 teaspoon turmeric
1 teaspoon black pepper
1 cup red kidney beans
4 cups water
3 dried limes
2 tablespoons lemon juice

Heat oil in a large pan.

Add onions and sweat them until they lose moisture.

Add lamb chunks to the onions and stir.

Add turmeric and black pepper, stir and fry until meat changes color.

In a separate pan, fry the herbs (sabzi) for around 10 minutes until dark green.

Add the fried sabzi to the meat and mix well.

Cook on low heat for around 3 to 4 hours, allowing it to smoke.
