Prepare a baking sheet by lining it with parchment paper.
Toast peanuts in a dry skillet over medium heat until fragrant, about 5-7 minutes.
Combine sugar, water, and glucose syrup in a saucepan over medium heat.
Stir the mixture until sugar dissolves, then bring to a boil.
Cook the syrup until it reaches a hard crack stage, approximately 300°F (150°C).
Remove the saucepan from heat and stir in butter, vanilla extract, baking soda, and salt until well combined.
Quickly fold in the toasted peanuts until evenly coated with the syrup.
Pour the mixture onto the prepared baking sheet and spread it out evenly with a spatula.
Allow the brittle to cool completely at room temperature, about 30 minutes.
Once cooled, break the brittle into pieces.
Store in an airtight container for freshness.
