This layered cake features a rich chocolate and vanilla batter, often adorned with cherries, symbolizing the vibrant landscape. Traditionally served at celebrations, it has become a beloved dessert in many German households, with variations found across Europe.

Preheat the oven to 180°C (350°F).
Separate the eggs.
Whisk the egg whites with 50 g of sugar until stiff peaks form.
Whisk the egg yolks with the remaining sugar until frothy.
Add baking powder, flour, and water to the egg yolk mixture.
Transfer half of the batter into another bowl and mix in cocoa powder and milk.
Fold the egg whites into each half of the batter.
Prepare a baking tray with baking paper.
Spoon the light and dark batter into the tray in splodges and swirl with a fork.
Bake for 25 minutes.
While the cake is baking, prepare the vanilla pudding filling by mixing 40 g of sugar with 500 mL of milk, reserving 6 tablespoons.
Bring the remaining milk to a boil, whisk in the pudding mixture, and return to heat until it thickens.
Cover the pudding with cling film and let it cool completely.
Whisk 200 g of soft butter until creamy, then mix in the cooled pudding.
Spread the buttercream over the cooled cake.
Melt dark chocolate and pour it over the buttercream, smoothing it out.
