Rinse 1/2 cup lentils with cold water.
Place lentils into a pot.
Add 1 cup water to the pot.
Simmer the lentils until cooked.
In a lightly oiled pan, add 1/2 chopped onion and 1/2 diced carrot.
Mix well and sauté over medium heat for 5 minutes.
Add 1/2 diced bell pepper to the pan.
Stir in 1 tbsp tomato paste, 1 tsp cumin, 1 tsp paprika, and 1 tsp garlic & coriander seasoning.
Season with salt.
Cook over low heat for 5 minutes.
Add the cooked lentils to the pan.
Stir in chopped parsley.
Take a filo pastry sheet and cover the remaining sheets with a damp towel to prevent them from drying out.
Fold the filo sheet in accordion-style, like a fan.
Add the filling in the center of the folded filo sheet.
Fold to enclose the filling.
Transfer onto a baking tray and spray with oil.
Bake in the preheated oven at 390°F (200°C) for 20 minutes.
