1 cup water (8fl oz | 250ml)
1/2 chopped onion
1/2 diced carrot
1/2 diced bell pepper
1 tbsp tomato paste
1 tsp cumin
1 tsp paprika
1 tsp garlic & coriander seasoning
salt
chopped parsley
filo pastry sheet
oil spray

Rinse 1/2 cup lentils with cold water.

Place lentils into a pot.

Add 1 cup water to the pot.

Simmer the lentils until cooked.

In a lightly oiled pan, add 1/2 chopped onion and 1/2 diced carrot.

Mix well and sauté over medium heat for 5 minutes.

Stir in 1 tbsp tomato paste, 1 tsp cumin, 1 tsp paprika, and 1 tsp garlic & coriander seasoning.

Take a filo pastry sheet and cover the remaining sheets with a damp towel to prevent them from drying out.
