Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. 1In a mixing bowl, mash the ripe bananas with a fork until smooth.
  2. 2Stir in the melted butter into the mashed bananas.
  3. 3Mix in the sugar, beaten egg, and vanilla extract until well combined.
  4. 4Sprinkle the baking soda and salt over the mixture and mix in.
  5. 5Add the flour and stir until just combined. Do not overmix.
  6. 6Fold in the chopped walnuts if using.
  7. 7Pour the batter into a greased 7-inch round cake pan that fits in your Instant Pot.
  8. 8Add 1 cup of water to the Instant Pot and place the trivet inside.
  9. 9Place the cake pan on the trivet and close the lid of the Instant Pot.
  10. 10Set the Instant Pot to manual high pressure for 50 minutes.
  11. 11Once done, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
  12. 12Carefully remove the cake pan from the Instant Pot and let the banana bread cool before slicing.
