Heat a karahi (or kadhai) on medium heat and add 1 cup cooking oil.

Once the oil is hot, add the chicken pieces and fry for about 10 minutes, stirring regularly, until the chicken turns lightly brown and is thoroughly cooked.

Add 1 tsp of cooking salt halfway through frying to balance the flavor.

Add 4 chopped green chilies.

Remove 3/4 cup of oil once the chicken is thoroughly fried.

Add 4 halved tomatoes into the kadhai and cover it with a lid. Cook for 10 minutes, or until the tomatoes soften.

Poke the tomatoes and peel off the skin for a smoother texture.

Add half of the sliced 1 inch ginger to the chicken.

Add 1 tsp of crushed black pepper.

Add another 1 tsp of salt to balance the flavors.

Cover & cook for another 10 minutes.

Add 3/4 cup of water to create a gravy, then simmer for 6-8 minutes.
