1 kg chicken
¼ cup vegetable oil
8 cloves garlic
50 grams ginger
Salt to taste
5 tomatoes
1 tbsp cumin
1 tbsp coriander powder
1 tbsp chili powder
1 tbsp garam masala
½ tbsp black pepper
½ tsp turmeric powder
10 - 15 green chilies
1 - 2 tbsp dry fenugreek leaves
20 grams butter
30 grams ginger (julienne slices)
Fresh coriander (handful chopped)
More green chilies (for garnish)

Heat the oil in a karahi and fry the chicken until golden on the edges.

Peel and pound the ginger and garlic, then add to the chicken.

Add salt to taste, starting with ½ tsp.

Toss in the tomatoes and simmer for 15 - 20 minutes. Add water if it gets dry.

When the tomatoes are soft, remove the skin and mash them into a sauce. Cook until fully dissolved and chicken is tender.

Add all the dry spices: cumin, coriander, chili powder, garam masala, black pepper, and turmeric. Stir continuously, adding water if it gets too dry.

Add sliced green chilies and fenugreek leaves. Continue to simmer.

Add butter and simmer until most of the liquid boils out, leaving a thick sauce.

Julienne the ginger, chop the coriander, and cut more green chilies in half. Toss them in, fold into the chicken, and turn off the heat.
