Preheat the oven to 400°F (204°C).
Prepare a heavy-duty roasting pan with a generous amount of olive oil in the bottom.
Wash and cut the red potatoes into uniform chunks.
Add the cut potatoes to the roasting pan and toss to coat them completely in olive oil.
Sprinkle the potatoes with fresh thyme leaves, kosher salt, and freshly ground black pepper.
Add half a red bell pepper cut into 1-inch cubes to the pan.
Place the roasting pan in the preheated oven and roast for 30 minutes without touching them.
After 30 minutes, remove the pan from the oven and toss the potatoes gently with a big spoon or spatula.
Return the pan to the oven for another 20 minutes.
After 20 minutes, remove the pan again and toss the potatoes strategically, rotating them to expose the lighter sides to the bottom of the pan.
Put the pan back in the oven for an additional 15 minutes.
After 15 minutes, turn off the oven and leave the potatoes inside for another 15 minutes before serving.
Taste and adjust the seasonings, adding more salt or cayenne pepper if desired.
