Rinse the red potatoes in cold water and pat them dry.
Cut the potatoes evenly into wedges or cubes.
Place the cut potatoes in a large bowl and add a generous amount of olive oil.
Add sea salt and freshly cracked pepper to the bowl.
Add Italian seasoning from the container and smoked paprika.
Mix the ingredients well to coat the potatoes evenly.
Take a casserole bowl and add a layer of olive oil to the bottom to prevent sticking.
Place the seasoned potatoes into the casserole bowl and stir to ensure they are evenly distributed.
Preheat the oven to 400°F (204°C).
Bake the potatoes in the preheated oven for 30 minutes.
After 30 minutes, remove the potatoes and stir them gently to prevent sticking.
Return the potatoes to the oven for another 20 minutes at 400°F (204°C).
After 20 minutes, remove the potatoes again and stir them.
Add parmesan cheese on top of the potatoes.
Return the potatoes to the oven for an additional 15 minutes at 400°F (204°C).
After the final 15 minutes, turn off the oven and let the potatoes rest inside for 15 minutes.
Optionally, broil the potatoes for a few minutes to caramelize them, although this step was not performed in the video.
