Welcome to Chef Henry's Jamaican Kitchen.
Show all ingredients: fresh thyme, half of green sweet pepper, half of red sweet pepper, three carrots, three cloves of garlic, one thumb-sized piece of ginger, one onion, and some scallions.
For seasoning: pimento, Maggie chicken flavor, seasoned salt, onion powder, meat seasoning, and Maggie all-purpose seasoning.
Add 1 tablespoon of Maggie chicken flavor seasoning to the turkey necks.
Add 1 tablespoon of seasoned salt to the turkey necks.
Add 1 tablespoon of onion powder to the turkey necks.
Add 1 tablespoon of meat seasoning to the turkey necks.
Add 1 tablespoon of Maggie all-purpose seasoning to the turkey necks.
Add a few grains of pimento to the turkey necks.
Add scallions, thyme, garlic, onion, and ginger to the turkey necks and massage the seasonings in.
Add 1 teaspoon of browning for color and massage it in until the right color is achieved.
Heat a stir fry pan on the stove and add vegetable oil to fry the turkey necks.
Once the oil is hot, add the turkey neck pieces and stir them around to prevent sticking.
Cover the pan with a lid and let the turkey necks fry for 15 minutes.
Drain excess oil from the pan using a spoon.
Add the seasoned onion, scallions, thyme, garlic, and ginger to the turkey necks in the pan.
Add the red and green sweet peppers and carrots to the pan.
Add 3 cups of water to the pan, scraping the bottom to get all the seasoning.
Cover the pan with a lid and cook for 1.5 hours for tender meat, or 45 minutes if using a pressure cooker.
Check on the turkey necks after 1 hour and 40 minutes, stirring occasionally.
Taste the turkey necks and adjust seasoning as necessary, noting that no additional salt is added due to the seasonings already containing salt.
Let simmer for the last 5 minutes before serving.
Serve the brown stew turkey neck with rice, dumplings, or bananas.
