Soak 2 cups of soy rice in water overnight.
Cook the soaked rice in a rice cooker with 1.5 cups of water until done.
In a small saucepan, cook 1 cup of coconut milk over low heat, stirring constantly until smooth, then add 4 ounces of butter until melted and set aside.
In a separate pot, soak 0.25 cup of red beans overnight, then cook in water with 1 teaspoon of baking soda for about 1.5 to 2 hours until soft.
Once the red beans are soft, add 1 cup of sugar and cook until the water evaporates, then set aside.
Rinse the soaked rice under water until the water runs clear, then place it in the rice cooker with 1.5 cups of water and cook until done.
In another bowl, soak all the dry fruits in hot boiling water to soften them.
Prepare a souffle cup by layering rice at the bottom, followed by azuki bean puree, then another layer of rice and top with zookeeping puree. Steam for 5 to 10 minutes before serving.
Alternatively, use a mold lined with plastic film, layer with dry fruits, then rice, azuki beans, and rice again. Steam for about 5 minutes before serving.
For the traditional method, coat a bowl with melted butter, layer with dry fruits, then rice, azuki beans, and rice again. Steam for about 5 to 7 minutes, then flip onto a plate and pour sauce over, sprinkling with honey, pine nuts, or roasted slivered almonds.
