1 pound lamb shoulder cut into 1-inch cubes

1/8 teaspoon ground cloves
8 ounces diced tomatoes
1 cup water
3 tablespoons natural unsweetened creamy peanut butter
ripe plantains
water for boiling
2 pinches salt
1 tablespoon oil or melted butter
1 teaspoon hot chili powder
1 bouillon cube crushed

Heat 3 tablespoons of vegetable oil over medium heat in a skillet or saucepan.

In batches, brown 1 pound of beef and 1 pound of lamb shoulder.

Return all the meat to the saucepan.

Add 1 large chopped onion, 1/2 teaspoon of salt, 1/8 teaspoon of black pepper, 1/8 teaspoon of thyme, 3 minced garlic cloves, 1 tablespoon of finely chopped parsley, and 1/8 teaspoon of ground cloves to the saucepan.

In a bowl, mix 8 ounces of diced tomatoes with 1/2 cup of water.

Add the tomato mixture to the saucepan.

In another bowl, mix 3 tablespoons of natural unsweetened creamy peanut butter with the remaining 1/2 cup of water, stirring to dissolve.

Add the peanut butter mixture to the saucepan and stir well.

Bring the mixture to a boil, then reduce the heat and let it simmer for one hour.

Peel and slice ripe plantains into small chunks.

Bring a pot of water to a boil and add the plantains.

Let the plantains boil until tender, about 30 minutes.

Drain the plantains and place them in a bowl.

Add 1 tablespoon of oil or melted butter, 2 pinches of salt, 1 teaspoon of hot chili powder, and if using, the crushed bouillon cube to the plantains.

Mash the plantains together, and if they have cooled down too much, return them to the pot for 10 minutes.

Scoop the plantains into ramekins and ladle the stew into stew bowls or white plates to serve.
