Homemade Limoncello

5 Lemons, peel only (organic lemons are better)
1 1/4 cups Pure grain alcohol like Everclear (or Vodka)
3 cups Water
1 1/4 cup Sugar

Using a vegetable peeler, peel the skin off of each lemon in long strips, making sure to only peel the skin and not peel into the white pith of the lemon.

Place the strips into the glass jar and add the alcohol. For alcohol I use everclear or you can use vodka. Mix together and seal shut. Store in a dark, cold place, like a basement, for at least 30 days.

After 30 days, continue to the next step.

Add the water into a pot and bring to a boil. Once boiling, add the sugar and heat over medium/low heat until the sugar has completely melted into the water. Remove from heat and set aside to cool off.

Once the sugar water has cooled, strain the lemon alcohol into the sugar water and discard the peels. Mix together to make the limoncello. Transfer the limoncello into a bottle and store in the refrigerator. Serve the limoncello in chilled glasses and enjoy responsibly!
