Wash the organic lemons under warm water and scrub them with a brush.

Use a potato peeler to remove the skin from the lemons, applying very little pressure to avoid the white pith.

Place the lemon skins into a container that is at least 3 liters or 3 quarts in size.

Pour 750 milliliters of alcohol into the container with the lemon skins using a funnel.

Seal the container and place it in a cool, dark place for 2 weeks, shaking it a few times a week to mix the flavors.

After 2 weeks, bring 1 liter of filtered water to a boil in a pot.

Add 700 grams of sugar to the boiling water and stir until dissolved, then turn off the heat and let it cool for 2 to 3 hours.

Once the sugar water has cooled, pour it into the container with the lemon and alcohol mixture using a funnel.

Measure out 250 milliliters of alcohol (190 proof) and add it to the mixture.

Seal the container again and let it sit in a dark room for an additional period.
