Limoncello is a traditional Italian lemon liqueur, often served chilled as a digestif after meals.

Ingredients

  • โ—1 cup water
  • โ—1 cup granulated sugar
  • โ—10-12 lemons (zest only)

Instructions

  1. 1Wash the lemons thoroughly and dry them.
  2. 2Using a vegetable peeler, remove the zest from the lemons, being careful to avoid the white pith.
  3. 3In a large glass jar, combine the lemon zest and vodka. Seal the jar and let it sit in a cool, dark place for at least 1 week, shaking it gently every few days.
  4. 4After a week, prepare a simple syrup by combining the water and sugar in a saucepan over medium heat. Stir until the sugar is completely dissolved, then let it cool.
  5. 5Strain the lemon-infused vodka through a fine mesh sieve or cheesecloth into a clean container, discarding the zest.
  6. 6Mix the cooled simple syrup with the lemon-infused vodka, adjusting the sweetness to your taste.
  7. 7Bottle the limoncello in clean glass bottles and seal them tightly.
  8. 8Refrigerate the limoncello for at least 24 hours before serving for the best flavor.
