Cream puffs, or profiteroles, are a classic French pastry made from choux pastry. 1

Combine 1/2 cup water and 1/2 cup milk in a saucepan.

2

Add 1/8 teaspoon salt and 4 ounces of cubed unsalted butter to the saucepan.

3

Turn the heat to medium-high and bring the mixture to a boil until the butter is melted.

4

Once boiling, remove from heat and add 1 cup of all-purpose flour all at once, stirring vigorously until a smooth paste forms.

5

Turn the heat back on and flatten the mixture in the pan, cooking until it starts to sizzle and a film forms on the bottom, about 3-4 minutes.

6

Stir the mixture until all steam evaporates, which may take another 3-4 minutes.

7

Add the eggs one at a time, stirring until each egg is completely absorbed before adding the next.

8

Once all four eggs are added, the batter should be thick and glossy, ready for piping.

9

Transfer the choux pastry into a piping bag fitted with a small open tip.

10

Pipe small circles onto a parchment-lined baking sheet, leaving space between each as they will expand.

11

Dip a finger in water and smooth out any tails formed while piping.
