Add 1 and 1/2 cups of whole milk and 1/2 cup of heavy cream into a medium pot.

Split the vanilla bean down the middle and scrape out the seeds; add the seeds to the milk and cream mixture.

Place the pot over medium high heat and bring to a boil, stirring occasionally.

In a separate bowl, whisk together 2/3 cup of granulated sugar, 1/4 teaspoon of salt, and 1/4 cup of cornstarch.

Separate 6 egg yolks and add them to the sugar mixture, whisking until smooth and pale yellow.

Once the milk mixture is boiling, take it off heat and temper the egg mixture by slowly drizzling in half a cup of the hot milk while whisking.

Once tempered, slowly drizzle in the rest of the hot milk while whisking continuously.

Strain the mixture back into the pot to remove any lumps or vanilla beans.

Return the pot to medium high heat and whisk constantly until the mixture thickens and bubbles appear.

Once thickened, remove from heat and add 1 tablespoon of cold butter, whisking until melted and smooth.

Transfer the custard to a bowl, cover with cling wrap pressed against the surface to prevent a skin, and refrigerate for 2 hours to overnight.
