In a mixing bowl, add 1/4 cup semolina and 1/4 cup besan, mix well.
Gradually add water to make a thick batter and let it rest covered.
Mash 4 medium boiled potatoes in a bowl.
Add 1/4 teaspoon red chili powder, 1/2 teaspoon roasted cumin powder, 1/2 teaspoon chaat masala, 1/4 teaspoon garam masala, and salt to taste to the potatoes.
Add 2 finely chopped green chilies and 1 medium chopped onion to the potato mixture, mix well.
Spread tomato sauce on slices of white bread.
Place the potato mixture on top of the bread slices and press gently.
Cut the bread into three equal pieces.
Check the semolina and besan batter, adjust the consistency with water if needed.
Add grated raw potato to the batter and mix well.
Add 1/2 teaspoon roasted cumin powder, 1/4 teaspoon red chili powder, 1/4 teaspoon garam masala, 1/4 teaspoon chaat masala, salt, fresh coriander, 1/4 teaspoon kalonji, and 1/4 teaspoon ajwain to the batter, mix well.
Dip the bread pieces into the batter, ensuring they are well coated.
Heat oil for frying and carefully add the coated bread pieces to the hot oil.
Fry on medium flame, adding hot oil on top of the bread pieces to help them cook evenly.
Flip the bread pieces once they are golden brown on one side and fry until golden brown on the other side.
Remove the fried bread pieces and place them on a plate.
